Robe dorée limpide, bulles très fines et régulières. Nez subtil et complexe : fruits blancs mûrs, zeste d’orange, pâte d’amande, craie, fleurs séchées et une touche de fumée fine. En bouche, un champagne à la fois profond et vertical, alliant texture crémeuse, tension minérale et équilibre racé. Finale vibrante, saline et persistante. Un vin de grande précision, qui mêle intensité et pureté.
Terroir : Issu de parcelles classées Grand Cru, situées sur des coteaux d’exception. Sols majoritairement crayeux, apportant finesse, rectitude et minéralité au vin, en contraste avec les terroirs sablonneux de Gueux.
Vinification et élevage : vinifiés en fûts anciens. Fermentation spontanée avec levures indigènes, élevage long sur lies sans filtration. Dégorgement Extra Brut, sans ou très peu de dosage.
Accords mets/vin : carpaccio de Saint-Jacques aux agrumes, poularde demi-deuil, ris de veau aux morilles.
