Flying Pig
From the Stones' oldest vineyard (Christophe calls it The Stones, not The Rocks), the clear ruby-coloured 2013 Syrah Cailloux incorporates 5% co-fermented Viognier and has a distinct salinity, as well as classic notes of peat, mushroom, iodine, sweet cherry and cassis. Although gamey and a little backward on opening, it will blossom with time in the glass and can be enjoyed now with a decanter, or cellared for a decade or more.

Harvest period: from 26 September to 1 October
Vinification: Fermentation takes place in concrete vats for 2 - 3 weeks and includes 50% whole grapes.
Maturing: 18 months maturing in foûdre and half muids of French origin. 15% of new stock.

Alcohol content: 14.2%
Acidity: 5.5 g/L (expressed as tartaric acid.)
