Hand-picked, sorted, not crushed, maceration for 2 to 3 weeks.
Maceration, fermentation and maturing in concrete vats for 12 months.
To be served with: white and red meats, duck, lamb
Ageing potential: 3 to 7 years
Serve at 16/17°C, uncork a few hours before and decant
