Amarone Paverno
Dark ruby colour, intense nose, macerated red fruits, spices and cherries, stone, cherries in brandy. On the palate, the wine is full and intense, structured but very balanced, without any heaviness or excess of sugar. It is its expression of fruit and its great drinkability that is striking, unusual for this type of wine.
Alberto Vaona has preserved the authentic style of the real wines of the Verona region, from the 10 hectares of his farm. Gravity and traditional winemaking processes are still used here for the vinification and drying of the grapes, bringing an unusual finesse to the sumptuous but digestible Amarone.
This wine is made from grapes grown in vineyards that are at least 25 years old in the Valpolicella hills, in the municipality of Valgatara di Marano. The soils are alluvial on limestone and basalt, with a dominant western exposure at an average altitude of 250m. Some vineyards are terraced ("Marogne").

Vinification
Each grape variety is harvested successively. The bunches are placed in small wooden crates for four months, the time for a natural and traditional drying. A light pressing is then followed by a partial de-stemming, followed by 10 to 12 days of cold maceration. Spontaneous fermentation is initiated using only indigenous yeasts.
Alcoholic and malolactic fermentation 30 to 35 days in stainless steel tanks.
Aged for 18 months in 1200 litre wooden tuns.
Aged for 5 months in the bottle before marketing.

The Estate Vaona
La famille Vaona perpétue depuis longtemps la tradition de la production de vins de Valpolicella dans la région classique du même nom, plus précisément dans la commune de Marano, au nord de l'Italie.
Cette exploitation vinicole a toujours transmis les valeurs ancestrales qui la distinguent. La cave, qui a récemment été rénovée, fait partie d'un complexe construit au milieu du XVIIe siècle. Depuis des générations, la famille consacre sa passion et ses sacrifices quotidiens à la production de l'Amarone et du Recioto de la Valpolicella.
Les terrains de Vaona, qui s'étendent sur environ 10 hectares, bénéficient d'un excellent ensoleillement et se composent principalement de collines, à une altitude moyenne d'environ 200 mètres au-dessus du niveau de la mer. Ces terrains fertiles sont idéaux pour la production des vins les plus célèbres et les plus appréciés, tels que l'Amarone et le Recioto de la Valpolicella.
La famille utilise des systèmes d'élevage traditionnels tels que le pergola véronèse et le système Guyot dans les zones de plaine, qui favorisent une production de raisins faible mais de meilleure qualité.
