Le Chardonnay En Barberon dévoile une robe or brillante aux reflets verts. Le nez, expressif et raffiné, associe des arômes de fruits mûrs (pomme golden, poire, mirabelle), d’agrumes confits et de fleurs blanches, soutenus par des notes de noisette grillée, beurre frais et pierre à fusil. En bouche, l’attaque est ample et énergique, avec une matière dense et concentrée, parfaitement équilibrée par une trame acide tendue et saline. La texture, soyeuse et élégante, s’accompagne d’une minéralité crayeuse qui signe le terroir. La finale, longue et persistante, révèle des notes d’agrumes confits, d’amande et de craie, avec une grande précision. Dans ce format magnum, le vin gagne en équilibre et en longévité, évoluant plus lentement et magnifiant sa complexité.
Terroir : marnes calcaires et argiles profondes.
Vinification et élevage : récolte manuelle. Vinification naturelle avec fermentations spontanées aux levures indigènes. Cuvée ouillée (les fûts sont complétés régulièrement pour éviter l’oxydation). Élevage long en fûts de chêne, dont une proportion maîtrisée de bois neuf, sur lies fines.

The Estate Stéphane Tissot
The Domaine André et Mireille Tissot of Bénédicte and Stéphane Tissot was created in 1962 and is located in Montigny-les-Arsures, a small town close to Arbois, the capital of Jura wines. Stéphane Tissot and his wife Bénédicte officially took over the estate in 1990.
Convinced of the benefits of the cleanest possible cultivation, the talented winegrower has endeavoured since the beginning to convert all his vines to organic cultivation (certification in 1999) and then to biodynamic cultivation since 2004, on the 50 hectares that make up his vineyard. The production of his own compost, the use of various herbal teas, everything is done to give the vines new vigour in order to bring out all the minerality of the terroir.
Because apart from his desire to produce natural wines, far from all the stereotypes of France and Navarre..., Stéphane Tissot's ambition is above all to give his wines their full dimension and to reveal the best of these magnificent Jura terroirs

As a highlight, Stéphane Tissot has created the Clos de la Tour de Curon cuvée, produced on a parcel of 72 ares of completely cleared, south and south-west facing Bajocian limestone scree. A micro-cuvée that demonstrates once again that it is possible to produce jewels on this Jura land.
