With the 2019 vintage wines also comes the Cabernet Franc straw wine made in 2018. The last bunches of Cabernet at the end of September 2018 rose in degree very quickly to reach 15.5% potential alcohol in a few days, which was too much to enter into the composition of Orion Alpha. The year being generous, the option was taken to put these bunches to dry on racks indoors, taking advantage of the hot, dry and ventilated days of late September. After a month, the grapes reach 20° potential and are pressed directly, without crushing.
Very slow pressing for 48 hours, fermentation and ageing for 2 years in stainless steel tanks.
Residual sugar: 155 g/L
