Pouilly-Fumé Prédilection
For this cuvée we select plots of land located on Kimmeridgian marl (white earth). This plot, planted on a terrace by my father, faces south-southwest. On the hillside overlooking the Loire, this plot has an impressive microclimate. In summer, in the afternoon, the temperature can be scorching because of the white reflective soil and the absence of air. The night can be very cool because the Loire River, a few hundred metres away, creates a very cool mist. This temperature difference is very favourable to the aromatic development of the Sauvignon. Hence the name, "Parcelle de Prédilection". The vinification is carried out in the same way as Aubaine. Matured for 18 months on fine lees in underground concrete tanks.
