Vinification et élevage : 100% de vendange entière, non foulée et encuvée par gravité. Sans levurage ni enzymage. Macération pré-fermentaire à froid (12-15°C) pendant 5 jours. Macération totale : 20 jours de cuvaison. Un remontage léger par jour jusqu'à la fin de la cuvaison. Pressurage avec le pressoir vertical. Puis l'élevage dure 16 mois en fûts (dont 35% de fûts neufs).
