Jean-François Ganevat returned in 1998 to his ancestral lands in the Côtes du Jura, where he is the 18th generation to cultivate the vines of the family's 8.5 hectare estate.
He produces wines like we like, the kind of wines that would make much more prestigious and expensive appellations pale with embarrassment!
Cultivation and vinification:
The estate is biodynamic. Yields are very low
The reds are not sulphited and the whites only receive sulphites at bottling (1 to 2 grams maximum).
A particularity of Jean-François Ganevat's vinification is the Ouillage. Contrary to the Jura tradition of not topping up white wines during maturation in order to allow the veil to develop (obtaining oxidative wines), Jean-François tops up the majority of his white wines.
This is a new style for the Jura.

The topping up consists of regularly filling the barrels to maintain a maximum level of the barrel in order to avoid oxidation of the wine.Indeed, the infiltration of the wine in the barrel as well as the natural evaporation requires this addition to suppress the contact with the air and its oxidizing consequences to the wine.
Produced in the Jura region where non-oiled wines are common, they can be called naturé or ouillé, which differentiates them from the famous wines made from the Savagnin grape. In the region, there is almost only this famous Savagnin grape variety (much more rarely Chardonnay) which can withstand not being oiled and produce in particular these famous yellow wines, which are called vin de voile because of the formation of this veil of yeast (called this is called vin de voile because of the formation of a veil of yeast (called a chapeau) which forms naturally above the level of the wine as it matures, and which develops that famous yellow taste with its characteristic flavours of nuts and morels.

The Estate Jean-François Ganevat
Jean-François Ganevat, known as Fanfan, returned to his roots in 1998, to the Combe de Rotalier, after having been cellar master at the Domaine Morey in Chassagne Montrachet. Each year he makes around forty cuvées from parcel selections of 25 different grape varieties on 9 hectares of clay, schist and marl, with very old vines, 80 years old for the yellow one and a hundred years old for others.
He began by applying an organic practice which led him to a biodynamic culture in 2006 in order to achieve his objective of making wines as natural as possible, without sulphur, vinified with indigenous yeasts.
Concentrated, racy, of great purity, long, broad, salivating, there is no shortage of adjectives to describe the wines of Jean-François Ganevat, which regularly reach the top in whites for the Chardonnay and Savagnin varieties, whether or not they are oaked, such as Grandes Teppes, Chalasses Marnes Bleues or in reds with his famous Trousseau.
As proof, the cuvée "les chalasses vieilles vignes de 1902" vintage 2011 was elected wine of the year in 2014 by the very respected guide Bettane et Desseauve, no less!
