The pears distilled at the Maison Colombier are only Williams pears produced on the hillsides in the commune of Villette de Vienne, the cradle of pear brandy in France.
No plantations are irrigated and a third of the orchards are over 120 years old.
The pears used to make this eau de vie have never been refrigerated and no sugar or yeast has been added.
To make 1 litre of eau de vie, you need about 15kg of pears.
These brandies are stored for a minimum of 2 years before being marketed.
