The pears distilled at Maison Colombier are only Williams pears produced on the hillsides of Villette de Vienne, the cradle of pear brandy in France.
No plantations are irrigated and a third of the orchards are over 120 years old.
At the beginning of May when the pears are just formed, some are selected to go through the neck of the bottles before being hung upside down so that rainwater cannot enter. The success rate varies from 20 to 50%.
At the end of July the bottles are removed from the trees and only the best ones are kept.
They are then washed and filled with pear brandy so that the pear releases its water and absorbs the alcohol.
The pears used to make this eau de vie are never put in the refrigerator and no sugar or yeast is added.
To make 1 litre of eau de vie, you need about 15kg of pears.
These brandies are stored for a minimum of 2 years before being marketed.
The trapped pears can then be kept for decades, provided they are still covered by this precious alcohol!
