Ce 1903 Carignan de Schistes revêt une robe sombre, aux reflets violets. Au nez, se dégagent des arômes de cerise et de mûre, ponctués de cuir et de truffe. En bouche, il se révèle complexe, profond mais il fait aussi preuve d'une grande fraîcheur, avec des tanins soyeux. Cette cuvée est très reconnue. C'est un grand vin de garde.
Terroir : sols de schistes anciens, issus de la compression d'argiles pures, riches en silice. Viticulture bio et biodynamique.
Vinification : Rendements 15 hl/ha, vendanges manuelles en caisses de 20 kg, fermentation en levures indigènes, en cuve béton, grains entiers et grappes entières, cuvaison allant de 10 à 15 jours. Elevage en foudre 9 mois, mise en bouteille sans collage ni filtration.
Accord mets/vin : lièvre à la royale, gibier à plumes comme la bécasse, cerf.
