Un grand Chardonnay sur terroir de calcaire Bajocien exprimant à merveille la patte du talentueux Julien Labet. Il débute par une attaque vive et citronnée, avec une minéralité distinctive, puis évolue vers des notes de fruits mûrs, de grillé et d'herbes, accompagnées d'une texture généreuse et légèrement beurrée due à son élevage en fûts. Tout est orchestré avec maîtrise, offrant un équilibre parfait et une sublimité remarquable en bouche. Sa grâce et sa longueur en font un vin d'exception.
Terroir : Chardonnay, sélection massale. 50 ares, plantation de 1967 à 1974. Sols d'argile de décalcification sur socle calcaire Bajocien.
Vinification et élevage : vinification sans intrant puis élevage de 20 mois en fûts de 350 et 500L.
Accords mets/vin : tataki de saumon, tartare de thon.
