Saint-Bris Exogyra Virgula (étiquette abîmée)
Vin blanc de robe dorée, le Saint-Bris Exogyra Virgula présente des reflets étincelants. Il dégage au nez des parfums de fruits mûrs, d'agrumes comme le pamplemousse rose, de mangue, de fleurs capiteuses comme la rose ancienne et une note iodée. Vous découvrirez en bouche ces arômes fuités et d'épices blanches avec une minéralité saline. Les parcelles poussent sur des calcaires du Kimméridgien qui contiennent des fossiles d'huîtres (l'exogyra virgula).
Le Saint-Bris Exogyra Virgula se déguste dès son plus jeune âge à 12/13° et peut être conservé au moins 5 ans.
Sol : Jurassique supérieur, étage kimméridgien moyen et supérieur, alternance de 80 mètres de calcaire et marnes lumachelliques.
Vinification : Vendanges fin septembre - début octobre très mûres, avec quelques grains de pourriture noble. Egrappage à 100% pressurage pneumatique très lent, fermentation alcoolique très longue à une température voisine de 25° dans sa première partie, pour ne garder que les aspects du terroir. Suivie de la fermentation malolactique, puis élevage sur lies fines en cuve.
Accords mets/vin : Poissons et viandes crus, crustacés, ris de veau, fromages comme le chèvre, le comté ou encore le roquefort.
