Trévallon, un vin de Provence devenu mythique ! Ce magnifique rouge gastronomique peut se conserver une bonne vingtaine d'années. En combinant à parts égales le cabernet sauvignon et la syrah, Eloi Dürrbach crée un vin aux tanins frais, élégants et vibrants, parfait pour accompagner tous les plats à base de truffe. Portée par une grande complexité aromatique, cette cuvée charnue, soyeuse et digeste est avant tout un modèle d'équilibre.
Terroir : sols calcaires et argileux, très caillouteux.
Vinification et élevage : en grappes entières, sans levurage et sans souffre, collage au blanc d’œuf frais, pas de filtration. Puis élevage de 24 mois en foudres.
Accords mets/vin : perdreau rôti, gardianne de taureau, tarte au chocolat.
