Terroir : sols argilo-calcaires profonds.
Vinification et élevage : vendange égrappée, non foulée et encuvée par gravité, sans levurage ni enzymage. Macération pré-fermentaire à froid (12-15°C) pendant 5 jours. Macération totale : 20 jours. Un remontage léger par jour jusqu'à fin cuvaison. Pressurage avec le pressoir vertical. L'élevage dure ensuite dix mois en fûts et un mois en cuve inox.
Accords mets/vin : faux-filet, côte de boeuf, magret de canard.
