L'empereur Charlemagne a laissé une empreinte indélébile dans l'histoire en offrant à la collégiale Saint-Andoche à Saulieu un vin d'exception. Ce vin emblématique, d'une qualité remarquable, renverse les attentes et possède toutes les caractéristiques d'une grande bouteille : concentration, équilibre, finesse, profondeur, complexité et persistance. Déguster ce vin procure une sensation unique, témoignant de sa valeur exceptionnelle. Tout en pureté et vivacité de sève, le Charlemagne séduit par son allonge crayeuse et son nez de chèvrefeuille.

Terroir : sol riche en silice, très calcaire, limoneux et très caillouteux (terre blanche). Au sud de la Montagne de Corton, entre Nuits-Saint-Georges et Beaune, il épouse l’arrondi du coteau qui relie Aloxe-Corton et Pernand-Vergelesses. Exposé au Midi, il s’étend en pente assez prononcée entre 250 et 320 mètres d’altitude.

Vinification et élevage : pressurage au pressoir pneumatique en grappes entières pendant 2h30. Débourbage : 24 heures. Départ de la fermentation alcoolique en cuve puis fin en fût. Puis l'élevage dure 16 mois en fûts et 2 mois en cuves inox (dont 28% de fûts neufs). 

Accords mets/vin : langoustes grillées, poularde à la crème, foie gras.

The Estate La Vougeraie

With the Domaine de la Vougeraie, we enter the very closed circle of the greatest wines of Burgundy. The impetus of the Boisset family and the choices made since 1999 have propelled the estate to an impressive level of excellence. The Vougeraie estate now covers 34 hectares, two thirds of which are in the Côte de Nuits and one third in the Côte de Beaune, 70% pinot noir and 30% chardonnay, with a production of around 100,000 bottles depending on the vintage. The name Vougeraie comes from Vougeot, which is why the estate owns 10 hectares of it... The estate is judiciously located in Premeaux-Prissey between the two hillsides, and has made the natural choice of biodynamic viticulture, 29 hectares of which adopt this method of cultivation which favours life in the vineyard and wines of obvious purity. To achieve optimum results, yields have been drastically reduced to harvest grapes that are always ripe and concentrated, often in whole harvests, and the team's winemaking work is ultra-precise, combining ancestral techniques with modern technology.

The Estate Le Clos du Caillou

The Clos du Caillou estate has the particularity of being an enclave adjacent to the Châteauneuf du Pape appellation area. The vineyard is made up of 44 hectares of Côtes du Rhône and 9 hectares of Châteauneuf du Pape, planted for the most part in 1956. It is composed of the 13 grape varieties authorised for the production of a Châteauneuf du Pape, the Grenache grape variety is the majority for the red wines, followed by Syrah, while the clairette rose, the grenache blanc and the roussanne share the majority of the white grape varieties. The soils here are particularly rich, sandy or pebbly, making it possible to produce wines of exemplary aromatic complexity.
All these specificities, gathered at the heart of the Clos du Caillou estate, allow us to offer very high quality Côtes du Rhône wines, such as the magnificent Quartz vintage, which demonstrates the richness of these exceptional terroirs. In addition, Sylvie Vacheron and Bruno Gaspard have been converting the estate to organic farming since 2006. The 2010 vintage was the first to benefit from the organic label (AB), which completes the quality of the work undertaken for decades.
