Du corps, de la texture, de la fraîcheur, du velouté dans le tanin, de la longueur et ce rebond final chocolaté étincelant. Au nez, il embaume la fraise des bois : c'est un vin solaire, qui s'impose par sa stature solide et son fruit généreux. Racé et plein, c'est une très belle réussite. Ce Châteauneuf-du-Pape "Clos" présente une couleur rubis profond, violet, avec des tanins soyeux et une bonne acidité. Toujours un redoutable rapport qualité/prix.

Terroir : les raisins sont issus de plusieurs lieux-dits : Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin, Pied de Baud, Les Bousquets, Les Parrans et Les Marines. Les sols sont principalement constitués de colluvions à quartzites, d’argiles marines, de sables, de grès mollassiques et de galets roulés.

Vinification : grappes récoltées à la main, avec un tri très sévère pour garder les meilleures baies, cueillies à maturité. La vinification est ensuite conduite avec quelques remontages et délestages. Jus de presse et jus de goutte sont élevés séparément. Macération : 35 jours, fermentation en cuve béton puis élevage : 65% en foudre, 20% en cuve béton, 8% en cuve acier et 7% en barrique ancienne.

Accords mets/vin : cuisine du sud, gibiers à plumes / poils, fromages, civet de lièvre, dessert au chocolat noir.

The Estate Clos du Mont-Olivet

The Clos du Mont Olivet was created in 1932 by Séraphin Sabon, and since its origins the family estate has been producing high quality, classic Châteauneuf du Pape on magnificent terroirs, as well as Côtes du Rhône wines of excellent quality.
The vineyard covers 32 hectares, 20.5 hectares of which are used for the Châteauneuf wines, which are made from a large majority of Grenache grapes, while the whites are made from Bourboulenc and Roussanne.


The domain still seems to be unknown in the area. But for how much longer...? The wines of the domain are regularly acclaimed by the finest tasters such as Parker, Bettane & Desseauve, RVF who often place Clos du Mont Olivet among the elite of the region.

The wines are always very deep, rich, imbued with their terroir, ready to stand the test of time. They will begin to peak at 10 years of age and will finish well after 20 years, depending on the vintage, when they will deliver all their aromatic complexity, which is impressive here. The Petit Mont is easier to access because of its constitution and also because of its really angelic price... As for the Côtes du Rhône, they are very good alternatives, providing a maximum of pleasure, like this Varène, which is predominantly Syrah and offers exceptional value for money... Then you may have the opportunity to touch the grail with this Papet cuvée produced only in the best vintages, which is the flagship cuvée of wine lovers.

The Clos du Mont Olivet is to be discovered as a matter of urgency because of the quality and consistency of all the vintages. Come and discover them on the website Les Passionnés du Vin. Nicolas Joly, one of the "great" precursors of biodynamic viticulture and very pedagogical in explaining all its benefits. The Coulée de Serrant is a very special wine, with a unique and very contemporary style, to be tasted at least once in your life... The Coulée de Serrant is an Appellation Contrôlée of only 7 hectares, exclusively owned by the Joly family. "One of the five greatest white wines of France", said Curnonsky.
