Sébastien David's vines were mainly planted around 1940, with some plots being much older, planted long before the appellation was classified in 1937.
Sébastien David has chosen organic and biodynamic farming to produce healthy grapes that respect the environment. In the cellar, the philosophy is low interventionist and Burgundian, with wooden containers, amphorae and long maturation. The wines are very pure, ripe and balanced. One can enjoy Hurluberlu, the perfect wine for friends, and all his more ambitious cuvées, always in very original containers.
