"Zerzilles", c'est le nom de la parcelle cadastrale, parcelle que l'on partage avec Patrick Baudouin, Le domaine de la Bergerie et Cédric Bourez.
Terroir : pente abrupte de 35° de schistes gréseux. 100% chenin sec sur les coteaux Est du domaine, à cheval sur Chaume et Quarts de Chaume.
Vinification et élevage : vendange manuelle en caissette. Pressurage lent à froid. Levures indigènes. 100% vinifié et élevé en barriques pendant 12 mois. Fermentation malolactique totale.
Accords mets/vin : bar de ligne en escabèche, givré sésame, chou pak choi.
