Made from limestone on the surface and marl in the subsoil, this wine is vinified and aged without sulphur. Very concentrated, spicy and smoky wine.
Tasting notes
Golden colour. Very complex nose of butter, citrus fruits and smoke. Mouth of a great mineral and tasty balance, of a great persistence on the aromas perceived in the nose. The finish is endless and will certainly keep for a long time.
Terroir
2.05 ha on Lias clay and some limestone scree on the surface. East and west exposure

In the vineyard
The vines are managed organically (Ecocert certified) and biodynamically (Demeter certified). The vines are cultivated without any inputs (no weedkillers, chemical fertilisers, etc.). Treatment of possible vine diseases with sulphur, copper and herbal teas.
The vines are completely grassed over.

Spontaneous fermentation in 228 litre barrels (1/3 new) for 24 months
Hand-picked in crates, pneumatic pressing. No sulphiting.

The Estate
The Domaine André et Mireille Tissot of Bénédicte and Stéphane Tissot was created in 1962 and is located in Montigny-les-Arsures, a small village close to Arbois, the capital of Jura wines. Stéphane Tissot and his wife Bénédicte officially took over the estate in 1990.
Convinced of the benefits of the cleanest possible cultivation, the talented winegrower has endeavoured since the beginning to convert all his vines to organic cultivation (certification in 1999) and then to biodynamic cultivation since 2004, on the 50 hectares that make up his vineyard. The production of his own compost, the use of various herbal teas, everything is done to give the vine more vigour in order to bring out all the minerality of the terroir.In addition to his desire to produce natural wines, far from all the stereotypes of France and Navarre..., Stéphane Tissot's ambition is above all to give his wines their full dimension and to reveal the best of these magnificent Jura terroirs.
