Beautiful volume on the palate with sweet spices, fat, unctuous, salty, refined and complete. This magnificent wine from the Terrasses du Larzac comes from a terroir composed of 90% rolled pebbles and 10% limestone. The yield of this wine does not exceed 20 hl/ha, which gives it a very high concentration.
Predominantly Syrah (70%), it is also composed of 20% Grenache and 10% Mourvèdre.
It is matured in Burgundy barrels of one or more wines per grape variety and parcel for 24 months. This wine is neither fined nor filtered.
It is a wine of finesse and freshnessin on finesse, freshness and elegance, on red fruits, spices, with fine tannins ending on a very long a very long finish.

The Estate Saint Sylvestre
The Saint Sylvestre estate, which takes its name from the church in Puéchabon where the first vines were historically planted, is located north of Aniane in the heart of the famous Terrasses du Larzac.
Sophie and Vincent Guizard own an area of 8 hectares, planted in 1993, of a typical Châteauneuf du Pape terroir, on rolled pebbles and benefiting from an exceptional exposure, while keeping the freshness of the wood that surrounds the parcels. Syrah, Grenache and Mourvèdre are grown here to produce wines of incredible quality, with a tiny yield of around 20 hectolitres/hectare.
The wines of Domaine Saint Sylvestre are vinified traditionally, using indigenous yeasts, to produce very fine wines, always in an elegant style, with a dominant Syrah for the reds and Roussanne/Marsanne for the whites.
We inevitably find a style of wine linked to the career of Vincent Guizard, who is already one of the great winemakers, since he benefited from the precious experience of Olivier Jullien of Mas Jullien to join his cousin Frédéric Pourtalié where they will produce together the famous wines of the Montcalmès domain...
