Le nez s’ouvre sur un bouquet frais et élégant, mêlant agrumes — citron, pamplemousse — à des notes florales délicates et une touche de pierre à fusil. En bouche, il déploie une belle fraîcheur, une rondeur maîtrisée et une minéralité fine qui souligne son équilibre. Terroir : vignes implantées sur des sols argilo-calcaires mêlés de galets roulés et de marnes.
Vinification et élevage : vendanges manuelles avec tri strict à la vigne. Pressurage délicat suivi de fermentation en cuves inox à température contrôlée. Élevage sur lies fines pendant plusieurs mois, avec bâtonnage régulier.
Accords mets/vin : poissons grillés ou en sauce légère, risotto aux asperges, plateau de fromages frais type chèvre ou burrata.

The Estate Saint Sylvestre
The Saint Sylvestre estate, which takes its name from the church in Puéchabon where the first vines were historically planted, is located north of Aniane in the heart of the famous Terrasses du Larzac.
Sophie and Vincent Guizard own an area of 8 hectares, planted in 1993, of a typical Châteauneuf du Pape terroir, on rolled pebbles and benefiting from an exceptional exposure, while keeping the freshness of the wood that surrounds the parcels. Syrah, Grenache and Mourvèdre are grown here to produce wines of incredible quality, with a tiny yield of around 20 hectolitres/hectare.
The wines of Domaine Saint Sylvestre are vinified traditionally, using indigenous yeasts, to produce very fine wines, always in an elegant style, with a dominant Syrah for the reds and Roussanne/Marsanne for the whites.
We inevitably find a style of wine linked to the career of Vincent Guizard, who is already one of the great winemakers, since he benefited from the precious experience of Olivier Jullien of Mas Jullien to join his cousin Frédéric Pourtalié where they will produce together the famous wines of the Montcalmès domain...
