Pi Vell
Ce Pi Vell est d'une fraîcheur absolue. Il arbore une robe d'une couleur or clair brillante. Il a un nez très complexe de graphite silex et de poivre blanc. La bouche elle, dévoile des arômes purs de fruits jaunes, sur la mirabelle, le raisin et l'abricot. La finale s'ouvre sur des notes d'agrumes avec une tension saline finement pimentée.
Terroir : sols sur schistes pauvres. Vieux macabeu plantés en 1947 sur des sols sablo-limoneux peu profonds.
Vinification : vignes cultivées en bio et biodynamie en limitant les rendements de façon drastiques pour obtenir un jus d'une concentration exceptionnelle.
Accords mets/vin : bar, sole, en carpaccio, en tartare ou juste grillés. Dans 3 ans, vous pourrez vous laisser tenter un poisson rôti sauce beurre blanc.
