The Terroir:
The parcel of Romanée Saint Vivant is wonderfully placed, with a road separating it from Romanée Conti. A fabulously prodigious land, a sublime soil that mixes clay and limestone, shapes one of the world's greatest reds.
For more information:
- A long history: created in 1098, the abbey of Citeaux has contributed for a long time to the development of the vine in Burgundy. The monks of Saint-Vivant de Vergy accompanied this new culture, as evidenced by the name given to this Côte de Nuits climate.
- Wood but not too much: despite or thanks to its Grand Cru status, the maturation of Romanée Saint Vivant in new wood remains very measured. The wine is aged in 30 to 50% new barrels, a new wood that contributes to the construction of the wine and the birth of soberly spicy notes.
- Until 1990, the vineyard was run by a winemaker from the village of Aloxe-Corton. The first wine signed by the Domaine de l'Arlot bears the 1991 vintage.

With such a wine, one should not hesitate and think big, very big: a fillet of beef accompanied by a truffle sauce, a duck in blood or a poularde with ceps. And in autumn, a hare à la royale will make a perfect union with this legendary red.
