Vin de Glace Cabernet Franc
This wine develops aromas of strawberry and rhubarb. It will reveal all its exceptional flavours when served with cooked fruit, or strawberries with fresh cream. Its exotic taste will be particularly enhanced by the presence of hazelnuts or dark chocolate. It takes all of Inniskillin's great expertise to produce an ice wine of such quality from Cabernet Franc! It's amazing!
But how is a Canadian ice wine made?
The grapes are left on the vines until January. The freezing and thawing during this winter period dehydrates the ripe grapes. This process concentrates the sugars, acids and grape extracts, intensifying the aromas and giving great complexity. The grapes are then picked by hand, berry by berry, ideally at a temperature of -10°C to -13°C (usually at night). The grapes are then pressed under extreme cold and the water remains frozen, only a few drops of concentrated sweet juice are recovered.
This process also explains the rarity of this wine compared to a traditional harvest: only about 50% of the beverage is recovered. Niagara Peninsula is a region particularly well known for its microclimate which allows the production of exceptional ice wines.
