Au nez, ce jéroboam de Saint sylvestre blanc dévoile un mélange de fruits blancs, où la Marsanne se distingue par des nuances de pêche et de coing frais. Ensuite, se révèle le caractère résineux et floral de la Roussanne, associé à l'exotisme raffiné du Viognier. Les subtiles notes d'élevage restent en retrait, mettant en valeur le fruit. En bouche, le vin se montre à la fois généreux et vif, affichant un superbe équilibre. Exceptionnel blanc du Languedoc, fin, floral, délicat, un concentré de saveurs. 

Terroir : sols calcaires lacustres.

Vinification et élevage : égrappage, foulage, pressurage direct par cépage, assemblage, fermentation en fût avec les levures indigènes du raisin. Puis élevage en fûts bourguignons de 1 vin pendant 12 mois. Mise en bouteille en fonction de la lune.

Accords mets/vin : tartare de thon, tartare de saumon aux agrumes, noix de Saint-Jacques snackées.

The Estate Saint Sylvestre

The Saint Sylvestre estate, which takes its name from the church in Puéchabon where the first vines were historically planted, is located north of Aniane in the heart of the famous Terrasses du Larzac.

Sophie and Vincent Guizard own an area of 8 hectares, planted in 1993, of a typical Châteauneuf du Pape terroir, on rolled pebbles and benefiting from an exceptional exposure, while keeping the freshness of the wood that surrounds the parcels. Syrah, Grenache and Mourvèdre are grown here to produce wines of incredible quality, with a tiny yield of around 20 hectolitres/hectare.


The wines of Domaine Saint Sylvestre are vinified traditionally, using indigenous yeasts, to produce very fine wines, always in an elegant style, with a dominant Syrah for the reds and Roussanne/Marsanne for the whites.

We inevitably find a style of wine linked to the career of Vincent Guizard, who is already one of the great winemakers, since he benefited from the precious experience of Olivier Jullien of Mas Jullien to join his cousin Frédéric Pourtalié where they will produce together the famous wines of the Montcalmès domain...
