Also marked by Syrah, Vent d'Est is spicy with notes of violet. The still dense mouthfeel and drying finish indicate that it will need to develop a patina with a year in the bottle.
Aged 24 months in demi-muids.
A deep garnet colour, this wine surprises with its exceptional aromas of truffle, lilac, liquorice and violet, but also cocoa beans, spices and garrigue.
The palate is fresh and racy, with a fine and elegant body and a silky finish.
Drink at 16-18°C, open at least 1 hour before serving, decanting can only do it good. Will accompany elaborate and complex dishes or hard cheeses.

The Cabardès is a dream terroir with a varied geology, situated in the west of the Languedoc and south of the Massif Central, a balance between east and west, sun and coolness, garrigue and mountain. The grapes are harvested by hand on these clay-limestone slopes on the southern slopes of the Montagne Noire, situated at an altitude of 300 metres.
The Grenache and Cabernet are destemmed and put into vats for about four weeks. The Syrah is vinified in whole bunches. The blending of the different grape varieties starts about 10 months after the harvest.
