Vignoble : Parcelles sur coteaux argilo-calcaires, conduites en Agriculture Biologique depuis 2012. Âge moyen des vignes : 15 ans
Cépage : 100% malbec
Vendanges : Manuelles le 5 septembre
Vinification : Encuvage des baies entières par gravité en cuve inox. Fermentation à basse température (max 23°C). 6 jours de macération, écoulage et pressurage léger.
Elevage : Élevage sur lies fines de 6 mois dans des jarres en terre cuite. Non collé.
SO₂ total : 52 mg/L Alcool : 12.5° pH : 3.28
