à côté' is produced from two grape varieties, Grenache and Merlot, the proportion of which varies according to the annual production. The Merlot parcel was planted in 1999 at a place called Campredon. The Grenache comes from plots planted in 1955 and 1973 at Les Mereuilles. These two areas are characterised by clay and limestone soils. The vines are cultivated organically, with full tillage. The vines are trained in a Royat cordon.
Vinification
The blend is composed of 40% Grenache and 60% Merlot. Grenache and Merlot are co-fermented according to the methods usually used on the estate, which aim to achieve a permanent balance and the gentlest possible extraction of the grapes (daily pumping over, temperature control, etc.)
Maturing
All the maturing work is geared towards preserving the maximum finesse and fruit. The wine is bottled in one go without filtration (~8 000 bottles).
