Les Varrons est un vin qui présente une clarté dans sa robe et offre un nez généreux caractérisé par des notes de fruits jaunes, de camomille et de vanille. La bouche, charnue, se prolonge agréablement avec une touche saline. Excellent potentiel de vieillissement.
Terroir : Chardonnay, ancienne sélection massale. Plantation de 1932 à 1967. Argile de décalcification sur socle calcaire Bajocien.
Vinification et élevage : vinification sans intrant puis élevage de 22 mois en fûts de 350 et 500L.
Accords mets/vin : filet mignon au foie gras, médaillon de veau, lapin chasseur.
