With Sébastien, our cellar master, we have rediscovered the extra soul that the great champagne wines of the 1960s knew how to show before industrialisation.
It's a unique job in the world: it's a question of matching the terroirs of our vines with the terroirs of the oaks in our barrels;
this is the story told by the name of this rare cuvée: ARGONNE, named after the historic forest of Champagne and crowned with the colon of Aÿ;
it is the result of an unprecedented work on the vinification in oak barrels and the traceability of the stave oaks which pushed us to learn the different terroirs of the forest of Champagne like our own vineyard terroirs;
it is an extraordinary and exciting discovery that we are now bringing back to you after enormous investments of time, learning, failures and money to understand and trace the oak trees of Argonne and manage to marry them, as soon as the grapes are cut, to the must just run out of our press.
As with each new Henri Giraud cuvée, we have ensured (through an independent laboratory) that your cuvée is of perfect sanitary quality, and in particular that it contains no pesticide residues.
