Ater - Noir
Situated in the Catalan countryside, a land of traditions (rugby, etc.) and contrasts, where the sun and the tramontana reign, the Domaine Sol Payré stretches between Perpignan and Collioure, at the foot of the Pyrenees .
The soil, clay-limestone, is composed of a multitude of small pebbles mixed with sandy clay.
The "Ater" cuvée is a Syrah-dominant wine, which comes from a rigorous selection of the best vines, and reveals a beautiful, brilliant, deep ruby colour.
The nose is elegant and intense, dominated by a harmonious blend of redfruits , morello cherries, blackberries, strawberries and spicy notes. A beautiful
attack on the palate, followed by present but mellow and melted tannins that suggest a good ageing.
This elegant wine is a perfect accompaniment to lamb, meat dishes, especially in sauce, and game.
A wine for laying down that will evolve favourably over a good ten years.

Severe pruning, green harvesting and optimal maturity are the factors that allow this exceptional concentration.
The Syrah and Grenache noir, de-stemmed, are vinified in the traditional way, and are pumped over daily in order to favour the development of the aromas, colour and tannins.
The Carignan is made by carbonic maceration.
The wine is then matured for more than a year in vats before being bottled at the estate to continue its ageing
