Ailsa Bay is a Lowlands distillery, established in 2007, with all the latest innovations in technology. These innovations have enabled Brian Kinsman and Peter Gordon to produce a peated single malt, unprecedented for the Lowlands region. It is also the first whisky to specify the PPPM peat indicator and SPPM sweetness. Ailsa Bay is a perfectly balanced whisky between these two flavour profiles. It has also undergone part of its ageing in "Quarter Casks", small casks which allow for accelerated maturation due to the more intense interaction with the wood.
