Jean-François Ganevat returned in 1998 to his ancestral lands in the Côtes du Jura, where he is the 18th generation to cultivate the vines of the 8.5 hectare family estate.
Cultivation and vinification:
The estate is biodynamic. Yields are very low
The reds are not sulphited and the whites are only sulphited at bottling (1 to 2 grams maximum).
A particularity of Jean-François Ganevat's vinification is the Ouillage. Contrary to the Jura tradition of not topping up white wines during maturation to allow the veil to develop (obtaining oxidative wines), Jean-François tops up the majority of his white wines.
