Terroir : reculée du val de Sorne, exposition sud ouest sur des marnes argileuses du lias avec éboulis calcaires.
Vinification et élevage : pressurage lent de tous les cépages ensemble. Fermentation et vieillissement en pièces de chêne et amphores en terre cuite sans s02 rajouté , avec un ouillage régulier et mis en bouteilles 6 mois après la récolte un jour « fleur » suivant le calendrier lunaire. Bouchage avec liège naturel.
