Terroir : Marnes bleues, graves sur sol argilo-calcaires.
Viticulture : Taille gobelet & cordon de Royat, labour 2 rangs sur 3, travail inter-cep.
Vendanges Manuelles, tri à la vigne et à la cave avant égrappage.
Vinification : Cuve ciment et inox, 30-35 jours de macération fermentation en levures indigènes.
Élevage : Cuves et barriques avec batonnage hebdomadaire des lies.
Mis en bouteille non collé et non filtré.
Accords : Plat en sauce ou mijoté, viandes grillées, saveurs méditerranéennes, curry de légumes/agneau, cantal entre-deux, tomme de vache.
A boire dans les 8 ans.
Service : Carafer et servir à 15ºC.
