Very aromatic nose, between the fruity (yellow peach, quince), the aromatic (cumin) and the plants (dill, angelica).
In the mouth, the attack is mellow, without lacking a nice vivacity. This is followed by a very wide range of aromas, faithful to that of the nose, with the addition of a touch of black pepper and ginger.
The finish, soft and warm, has a certain persistence and a nice residual warmth.

Widely used throughout Scandinavia, aquavit (from the Latin word aqua vitae, brandy) does not differ much from vodka in the way it is made (continuous distillation in column stills), nor even in the materials used. the only difference is the extensive use of potatoes, as the Nordic countries have fewer cereals. Furthermore, it is customary to use spices and herbs (mainly caraway) to give more flavour to the emblematic brandy of the Scandinavian countries. However, by an unexpected historical coincidence, Norway has been making a very special aquavit, "Linie", for over a century. Its origins date back to 1805, when a Norwegian ship, the Trondheim Prove, left for India and Australia with small barrels of aquavit that had previously contained sherry. But the brandy was not very successful, and the ship returned to Norway with its cargo. However, the length of the journey, the pitching of the ship, and even the variations in temperature, resulted in a particularly interesting brandy on arrival, with a beautiful amber colour, very mellow and very aromatic. Jorgen Lysholm, whose family was the owner of the ship, smelled a good deal and, after having created his distillery in Trondheim, made his aquavits travel on ships going to Asia and even Australia. The most astonishing thing is that this unique method is still used today: Lysholm Linie has to travel nearly five months by ship and cross the Equator line twice (hence its name) to benefit from the brand! The cargo ships used, under the responsibility of the Norwegian company Wilhemsen, generally go as far as Australia or New Zealand. It is specified in the specifications that the barrels must travel on the deck of the ships.
