L'Héritière des Pierres se distingue par une élégance remarquable, mettant en avant une minéralité prononcée évoquant la pierre à fusil. Des notes légèrement lardées s'entrelacent avec un fruit noir sauvage exceptionnel. À l'ouverture, des accents de réglisse et de garrigue se dévoilent. En bouche, la matière se révèle dense, charnue et particulièrement savoureuse. Les tanins de grande qualité promettent une capacité de vieillissement d'au moins 15 ans.

Terroir : 90% galets roulés 10% calcaire.

Vinficiation et élevage : égrappage, fermentation en cuves inox avec les levures indigènes du raisin, par cépages et par parcelles, pigeages maunels, cuvaisons longues 35 jours. Puis élevage : en fûts bourguignons de 1 vin et plus par cépage et par parcelle, pendant 24 mois. Assemblage 1 mois avant la mise en bouteille et en fonction de la lune. Vin ni collé ni filtré.

Accords mets/vin : carbonnade flammande, lièvre à la royale.

The Estate Saint Sylvestre

The Saint Sylvestre estate, which takes its name from the church in Puéchabon where the first vines were historically planted, is located north of Aniane in the heart of the famous Terrasses du Larzac.

Sophie and Vincent Guizard own an area of 8 hectares, planted in 1993, of a typical Châteauneuf du Pape terroir, on rolled pebbles and benefiting from an exceptional exposure, while keeping the freshness of the wood that surrounds the parcels. Syrah, Grenache and Mourvèdre are grown here to produce wines of incredible quality, with a tiny yield of around 20 hectolitres/hectare.


The wines of Domaine Saint Sylvestre are vinified traditionally, using indigenous yeasts, to produce very fine wines, always in an elegant style, with a dominant Syrah for the reds and Roussanne/Marsanne for the whites.

We inevitably find a style of wine linked to the career of Vincent Guizard, who is already one of the great winemakers, since he benefited from the precious experience of Olivier Jullien of Mas Jullien to join his cousin Frédéric Pourtalié where they will produce together the famous wines of the Montcalmès domain...

You can find the wines of the Saint Sylvestre estate at the Passionnés du Vin, sometimes in limited quantities, as there are more and more wine lovers despite the youth of the estate.
