A few kilometres from the distillery, Didier Alleaume discovered a fruit producer whose family had been locking up a few pears in carafes for the pleasure of a few privileged people every year for four generations.
Very quickly, the idea of associating apples and Calvados seemed attractive. Together, they decided to try the adventure of "La Pomme Prisonnière".
How was the apple introduced into the carafe?
In April, the apple trees are covered with white and pink flowers. In May, the embryo of the fruit forms in the heart of the flower, which then fades. The unfertilised fruit abort and fall off after flowering. Only 5% of the embryos will become apples. Waiting until the end of the fall to introduce the young fruit into the decanter means taking the risk that the neck will be too narrow. Introducing it too early is guaranteed to fail!
The difficulty lies in determining the precise moment to hang the decanter from the branch and introduce the small apple that will grow during the summer.
At the end of September, the decanter is detached from the tree; it is carefully cleaned and filled with a Christian Drouin Calvados Pays d'Auge. During the long months of maceration, the taste of the apple is added to that of the Calvados.
To keep "La Pomme Prisonnière" in its glory indefinitely, simply add some Calvados before it is uncovered, Christian DROUIN Pays d'Auge Calvados, of course!
