Tasting notes
Vibrant and fleshy fruit, confoundingly smooth tannins with delicious cherry aromas. A great Pinot Noir that will age gracefully. Exceptional richness of constitution, fruit of exemplary beauty on raspberry and spices, velvet tannins.

Soil: Clay and Limestone

Age of the vines: 50 years on average

Viticulture
No weedkillers, vines are grassed and the soil is worked under the vines
Treatment strategy: organic approach (no insecticides, acaricides or anti-rot products)
Yields: 30 hl/ha

Vinification
Manual harvest with a first sorting of the grapes
Sorting table : 100% destemming. Maceration in wooden vats.
Fermentation, maceration and ageing : indigenous yeasts, cold pre-fermentation, punching down and gentle pumping over
Ageing: 2/3 in new barrels and one year old barrels and 1/3 in wooden vats.
Racking 11 to 18 months depending on tasting.

The Sauvignon parcels are now at an exceptional level, neck and neck with two or three other estates in the appellation.
The Pinot Noir still has no equivalent... and remains a very rare item...
