Gourmet mouth, crisp and fine with supple tannins and aromas of red fruits such as Morello cherry

2ha on the Bué terroir, clay-limestone soil and limestone subsoil

Vines about 30 years old

Viticulture

Organic approach (not certified) without insecticides, acaricides, anti-rot, weedkillers

Yields of 35hl/ha - Manual harvest with a first sorting of the grapes on the vine

Vinification

100% destemming on sorting table - Maceration in wooden vats - Aged in old barrels

Native yeasts, cold pre-fermentation, punching down and gentle pumping over

Racking 11 to 15 months without pumping over

No fining or filtering at bottling

The Estate

Based in Bué, the Pinard family, now led by Clément and Florent but still under the watchful eye of their father Vincent, is continuing its spectacular progress towards excellence, with organic farming and a demanding desire to transcribe each specific terroir as well as possible.
The Sauvignon parcels are now at an exceptional level, neck and neck with two or three other estates in the appellation.
The Pinot Noir still has no equivalent... and remains a very rare item...
