Closed the Grand Beaupréau 2014 of the stone castle-kiss is one of the best Savennières. Enjoy as an aperitif as well young as after a dozen years of guard!

The northern part is distinguished by geological diversity on soils of Shales and Sands: the phtanite predominates, contributing to the accuracy and freshness of the structure, the quartz and the rhyolites are involved in the presence of acids and personality mineral wine, the sandstone play on the power vector. This is the area the most early and coolest to handpick phenolic maturity. Then comes a middle area where alternate sands and Shales with a real environment variables impacting directly on the force, so the load and the pick-up date.

Further south of the parcel, we find the classic pattern of the Savennières with sands on shale IE even more force and acidity that was thick sand on shale.

Situation : three parcels of vines make up the ending of the great Beaupréau to a total area of 7 ha at the foot of the old mill of the Grand Beaupréau. This is the highest status of the Savennières appellation with a general direction South.
Terroir : intrusion of quartz, sandstone, rhyolite, and phtanites in sands and Shales

Driving mode : narrow vineyards (5500 feet/ha), grassed on inter ranks. Épamprage in May-June and then thinning in July manually, to optimize ventilation of clusters for a good maturity.
Phyto-health protection : micronutrients, marines, cuivrol algae and plant extracts.
Harvest : manual, by tries successive.
Vinification : pressing slow, settling 24 to 48 h, slow fermentation (alcoholic and malo-lactic, without seeding, or chaptalization), partial ageing in barrels
Support : this drink as an aperitif, on fish and seafood, it perfectly accompanies the carpaccios and can be enjoyed on fresh goat cheeses.
