The grapes are from four different plots. In order to maintain their individual characteristics, the grapes from each plot are fermented separately. A fermentation for 3 weeks, accompanied by a batonnage and a rest on the Lees of 2 months, bring complexity to the wine. This wine is characterised by the exotic character and a good structure.
Hartenberg Estate area:
Located in the hills of Bottelary, kilometres north of Stellenbosch and 40 kilometres north-east of Cape Town, the field Hartenberg belongs to Fiona Macenzie and Tani Browne. The vineyards are facing north on multiple soils: 9 different types of soils and microclimates under Mediterranean influence. Encépagement consists of Sauvignon Blanc, Riesling, Chardonnay, Merlot, Cabernet Sauvignon, Syrah and Pinotage. The area is known as "the House of wine without haste", due to the late flowering of his vineyard. Graduate of the Faculty of? technology of Elseburg in 1988, Carl Schultz is in charge of winemaking since 1994. He did travel to study in the largest areas in Tuscany and in France, particularly in the Rhone to satisfy his passion for Syrah.
