Harvest and breeding:
The harvest is done manually on all red wines as well as on the old vines in white.
The ageing is done in oak pieces, with ordging and sticking, as is tradition in Burgundy for our old vines (vines from 38 to 45 years).
The producer (the field, its evolution, anecdotes):
The wines of Gy, which were owned in the Middle Ages by the archbishops of Besançon, already had an international reputation and were drunk, a little later, at the table of the nobles of the 16th century.
As for the Guillaume family, they have been a winemaker since 1732 and have been nursery since 1895 on Charcenne and Gy. Their vines are a little different from other wineries, because their primary purpose is not only to produce grapes to make wines, but they are mainly a premultiplication base for the production of vine plants, as such the surfaces of vines are constantly changing according to the new selections of vine plants they develop.
Their wines are sold for 30%export: USA, Canada, England, Belgium, Germany, Singapore, Japan, Denmark, Italy and Switzerland.
