One of the greatest, if not the greatest, sweet wines in the world!

Estate: Oremus

Grape varieties: Furmint 70%, Harslevelu 30%

Vinification: According to tradition, the berries affected by Botrytis (aszú berries) are collected individually and stored separately in a vat before maceration for 10-15 days. During this period, the free-run juice from these berries, which drips out under the tank into a carboy, is called Eszencia.

Fermentation: 2years in 50 litre crystalcarboys

Aging: 24months in small Hungarian oakbarrels

Sugar: 481g/l

Acidity: 14.9g/l

Bottling date: February 2009

Tasting notes: Golden yellow colour with aromas of honey, quince and dried fruits. The palate is smooth with notes of apricots and almonds and honey followed by a nice citrus acidity.

Its variety:Fürmint

A noble white grape variety of the Hungarian vineyards, it is a must in the blending of Tokaj wines. It is a variety that is planted discreetly almost everywhere in the world, including France. Indeed, it was introduced at the beginning of the 19th century in the Gard and Hérault regions, as well as in Touraine and Aude. A very sweet grape variety with a very marked acidity, essential in any great sweet wine. Late ripening and with a thin skin, Furmint is very sensitive to noble rot. It is traditionally associated with Harslevelu in Tokaj, which is complementary in its contribution.

The typical Hungarian wine is white, or rather golden, distinctly sweet, but it is not a dessert wine as it is fiery, with incandescent touches, and goes well with fatty and spicy dishes that no light wine would support. Hungary's list of great white grape varieties begins with the strong, acidic Fürmint and the less sweet but more aromatic Harslevelü (the Tokaj grape). The wine-growing heritage amounts to about 150,000 ha.

Find out more about Hungary:

Few countries have such a strong wine (and culinary) tradition as Hungary. Hungarian wine historically ranks third, behind that of France and Germany, in terms of refinement and respect for tradition. While Italian viticulture was still essentially primitive, each Hungarian wine region was already producing wines of very high quality using indigenous grape varieties. The return to a more liberal system in the last decade has encouraged the country to produce quality wines from excellent grape juice.

The Estate Dujac

The Estate Sol Payré

Five generations of winegrowers have succeeded one another at the estate, from Gustave Payré to Jean-Claude and Bertrand Sol. The Domaine is located in Elne, in the heart of the Aspres, in Roussillon, at the foot of the Pyrenees, the natural border with Spain. Reasoned protection, yield control and maturity are our watchwords! The particularity of the Domaine comes from the different terroirs with in the south, in the Aspres (Elne and Passa), about fifty hectares on clay-limestone soils, greedy wines with character and in the north, in the Agly valley (Maury), about ten hectares spread over Schist, Granite and Gneiss, here it's the minerality that speaks, the fineness of the tannins and the complexity of the aromas
