Vinification: According to tradition, the berries affected by Botrytis (aszú berries) are collected individually and stored separately in a vat before maceration for 10-15 days. During this period, the free-run juice from these berries, which drips out under the tank into a carboy, is called Eszencia.
Fermentation: 2years in 50 litre crystalcarboys
Aging: 24months in small Hungarian oakbarrels
Sugar: 481g/l
Acidity: 14.9g/l

Tasting notes: Golden yellow colour with aromas of honey, quince and dried fruits. The palate is smooth with notes of apricots and almonds and honey followed by a nice citrus acidity.

A noble white grape variety of the Hungarian vineyards, it is a must in the blending of Tokaj wines. It is a variety that is planted discreetly almost everywhere in the world, including France. Indeed, it was introduced at the beginning of the 19th century in the Gard and Hérault regions, as well as in Touraine and Aude. A very sweet grape variety with a very marked acidity, essential in any great sweet wine. Late ripening and with a thin skin, Furmint is very sensitive to noble rot. It is traditionally associated with Harslevelu in Tokaj, which is complementary in its contribution.
