Located in the Catalan region, a land of traditions and contrasts, where the sun and the
tramontane, rugby and cargolade reign, this family estate stretches between Perpignan and
Collioure, at the foot of the Pyrenees, the natural border with Spain.
This beautiful story began in 1913. At that time a farm worker, Gustave Payré decided to buy a property consisting of ten hectares and a superb winery planted in the heart of the old town of Elne, just below the cathedral and the cloister dating from the 11th and 12th centuries.
These vines, located on the highest terraces of the Coteau Saint-Martin, benefit from an exceptional amount of sunshine. The soil, clay-limestone, is composed of a multitude of small pebbles mixed with sandy clay. It is thus an excellent support for a quality vineyard.
His son Maurice then planted the first Muscat vines for the production of Muscat de Rivesaltes. He maintained the vineyard, assisted by his daughter Mauricette, until the arrival of his grandson, Jean-Claude Sol.
The birth of Domaine Sol-Payré!
This is when the restructuring of the vineyard began with the introduction of new grape varieties such as Syrah, Merlot or Mourvèdre and the production of the first A.O.C. Côtes du Roussillon. Little by little, the vineyard grew to reach today about forty hectares.
At the cultural level, the reasoned production and the green harvest are adopted. For the vinification, the most efficient means are used while keeping their traditional know-how. For maturing, a cellar has been specially fitted out to guarantee exceptional ageing of the wines.
At the estate, the choice of vines guides the vinification: each variety is vinified separately, but the exposure of the plots also predominates. They finish the harvest with about twenty wines made...
The age of the vines, the control of yields, the maintenance of original grape varieties... it is by these simple means that they can remain in harmony with the typicity of their terroir
