"Pierre-Yves Colin a quitté le domaine familial de Saint-Aubin (Marc Colin) en 2006 pour un jardin de 2,5 hectares de vignes devenus 11 hectares et situés entre Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet et Meursault. Avec son épouse Caroline Morey, qui possède également son propre domaine, ils partagent un magnifique lieu de production très moderne depuis 2015.
Les blancs sont pressés en grappes entières et les jus qui en découlent sont très peu débourbés, afin de préserver un maximum de lies nourrissantes, avec des élevages longs de 20 mois.
