Pouilly-Fumé Utopia
This cuvée comes from a parcel of old vines planted on a white earth terroir. The vinification is carried out in old barrels and does not undergo any treatment or sulphiting. Since I started, I have been vinifying some barrels using the natural method, without any inputs. In order to better understand my wines, when they are sensitive, and when I need to be vigilant. Having never bottled these few barrels, I decided this year to create a new cuvee, Utopia. This cuvée, which I have been making for more than ten years, has enabled me to reduce the sulphite dosage to a minimum on my other cuvées.
