Details

Racy and balanced.
This Assembly white consists primarily of Chenin, which gives it its exceptional freshness for a southern wine. Other varieties bring wealth and aromatic complexity. A lot of race and balance. A joyful and complex wine.
The name of the wine "the spark" symbolizes the emotion that we want to convey and that illustrates very well this quote from Galilee "wine is the captive light of the Sun in water".
Tasting: White fruits, citrus fruit with minerality and a freshness typical of the terroir. Fat, amplitude, and persistence.
Gastronomy: Aperitif, crustaceans, noble fish, cooked or raw, white meat with cream, duck breast with peaches, cheese ripened creamy (Pélardons...).
